Brown Shimeji Mushrooms.
 
Texture- Pleasantly firm and mildly crunchy.
Taste- Sweet and mildly nutty.
Uses- Broad range of uses including soups, stocks and stir fries. Delicious with game and sea-food. Must be cooked!
White Shimeji Mushrooms.

Texture- Pleasantly firm and mildly crunchy.
Taste- Sweet and mildly nutty.
Uses- Broad range of uses including soups, stocks and stir fries. Awesome with game and sea-food. Must be cooked!.
King Osyter Mushrooms.

Texture- Deliciously chewy, remains firm when cooked.
Taste- Sweet and woody. One of the most popular and hardest to come by.
Uses- Very versatile. Great in Italian, French and Chinese cuisine or simply sautéed on a toasted Bruscetta.
Enoki Mushrooms.

Texture- Delicate with a slight crunch.
Taste- Mild and fresh both cooked and raw.
Uses- Great in soups, salads and garnishs particularly tasty in Asian dishes.
Shiitake Mushrooms.

Texture- Soft and spongy with a meaty quality.
Taste- Awesome woody almost meaty flavour.
Uses- Shiitake are the reason Forest Fungi exists. They are believed to have vast medicinal benefits. Delicious in Asian dishes and with Pasta.
Grey Oyster Mushrooms.

Texture- Delicate and velvety.
Taste- Very delicate raw and cooked.
Uses- Due to its mild flavours is best served with sea-food and chicken.
Nameko Mushrooms.

Texture- Jellylike and sticky to the touch (not for the unitiated).
Taste- Mild.
Uses- A traditional Japanese mushroom commonly used in stir fries and soups. Due to its texture it is probably a mushroom for those with an acquired taste.
Organic Chestnut Mushrooms.

Texture- Firm and meaty.
Taste- Earthy taste deeper than white mushrooms.
Uses- Very versatile- too many to list!
Organic Portabella Mushroom.

Texture- Meaty.
Taste- Deep earthy flavour.
Uses-  A great meat substitute. Delicious grilled or baked.
Organic Button Mushroom.
